We were lucky enough to have a long weekend at the beginning of August to celebrate one of my favourite public holidays: Women's Day :) I spent the weekend with my boyfriend and some friends in a small town a couple of hours outside of Joburg called Dullstroom. For those of you unfamiliar with Dullstroom, it's known as a fly fishing spot and its COLD! We spent a large part of the weekend huddled around a fire with a glass of wine. Not a bad way to spend a long weekend :)
I made the dough the night before we left and took it along in a cooler bag. Each morning, I rolled some of the dough into balls and left those in the fridge to set until tea time. Then I popped them into the oven for a few minutes and they were ready to go.
The cookies are pretty sweet and absolutely crammed full of goodies, so if you prefer a not so sweet cookies or a bit more cookie dough, then tone town on the marshmallows/Snickers/chocolate chips. With my sweet tooth, I put them all in :)
Little Bites of Heaven

170g butter150g brown sugar
63g sugar
1 egg
2tsp vanilla extract
219g flour
2tsp cornflour
1tsp baking soda
1 cup Snickers bits (Snickers bars chopped up)
1 cup chocolate chips
1 cup mini marshmallows
- Preheat the oven to 180⁰C
- Beat the butter, egg, sugars and vanilla until light and fluffy (about 7 minutes)
- Add flour, cornflour, baking soda and beat until just combined (about a minute)
- Mix in all the goodies by hand
- Roll the dough into balls and put on a baking sheet in the fridge for at least two hours. I found that about 5 hours gave good results.
- Bake the cookies at 180⁰C for 8 minutes
- Leave the cookies to cool on the tray for about 10 minutes before transferring them to a cooling rack. They are VERY soft when they come out the oven.
*The dough should keep in the fridge in a sealed container for about five days.
